Simple yet full of character since each one is individually made. Hand forged high carbon steels are used in the production of them. The series of steel is stamped on each handle. The first photo is of the knife you’re choosing. This one is smaller.
The X95 is my personal tried and true piece that’s gained a lovely patina over time.
